What is the LAST thing anyone wants to do on a Monday? If you said cook, you’re my kinda person! Don’t get me wrong I love to play chef and whip up some Sunday sauce that stays bubbling on the stove all day, while I make homemade meatballs, filling the house with memories of my Mema (ok, great now I’m sitting at my computer drooling, I wonder what kind of website my husband thinks I’m on 😂) but, something about Mondays make me want to reach for a pack ramen noodles and call it a night. Nothing against ramen, but sometimes I need something with a little nutrition. So if you’re catchin’ what I’m throwing’ ( I actually can’t believe I just typed that…. and that I’m not deleting it) then here are my Top 5 Go To Quick and Easy Dinner recipes
1. Loaded Baked Potato and Chicken One Pan Dinner.<
akess only 45 min to cook and it's a total set it and forget it dinner minimal prep and only ONE pan to wash!
- Chicken breast
- Potatoes (I use red)
- Broccoli Florets, Frozen or Fresh
- Bacon (optional)
- Cheddar Cheese
- Salt, Pepper, Montreal Seasoning
First you’re going to preheat the oven to 385 degrees. You’ll be using a 9×13 glass Pyrex.
Next, cut up your potatoes, onion, broccoli (if frozen just throw in the bag), bacon (if you like it more well done pre cook), sprinkle some salt and pepper, throw it in the Pyrex.
Cut up your uncooked chicken into cubes, rub Montreal seasoning onto them. Throw that in the Pyrex.
Cover with tinfoil and bake for about 45 min. When done, sprinkle cheese on & enjoy!
2. Personal Pizza<
his one is a favorite!
- Premade pizza dough
- Pizza sauce
- Shredded Mozzarella
- Any other toppings you want
Set oven to 400 degrees.
Sprinkle some flour on the counter or whatever surface you’re going to make the pizza on! Roll out the dough, add some sauce, cheese, and toppings.
Bake for 10-15 min. give or take & Enjoy
3. Crockpot Chili<
hiss one, I'm convinced is the reason I'm married 😉
- Ground turkey or beef
- Black Beans
- Pinto Beans
- Red kidney Beans
- Mexican style corn
- 2 cans of diced tomato & chili
- Chili powder
- Shredded Cheddar Cheese
First brown meat, with onion or onion powder and chili powder, cayenne 🔥 (a little goes a long way)
As the meat is browning add all ingredients (besides cheddar) to the crockpot.
Add meat cook on high for 8 hours or low for 6. When done, sprinkle cheese on top & enjoy (we like ours with Tostitos)!
4. Spinach Tomato Chicken Sausage Pasta
- Spinach Frozen or Fresh
- Pasta (Any type you prefer)
- Chicken Sausage
- Cherry Tomatoes
- Cannellini beans
- Olive oil
- Crushed Red Pepper (optional)
Start boiling pasta water while you cut up garlic, chicken sausage, and cherry tomatoes.
Throw a little olive oil in a large frying pan add spinach and garlic. Cook on medium – low until spinach shrinks. Add beans, sausage, tomatoes and spices.
When pasta is aldente, Drain pasta, keep a little water to add to the frying pan so the pasta doesn’t dry out.
Add pasta to the spinach mixture. Sprinkle grated cheese & Enjoy!
5.Breakfast for dinner! French Toast Bake
My personal fav! I use The Pioneer Womans recipe and it does NOT disappoint! (Photo above is before it was baked)
*The fresh strawberry sauce I make is a cup of sugar and a pack of strawberries boiled, then mashed!
Hope you guys enjoy these! As far as measurements go with the spices, I totally take after my dad and tell people “you know, just add a little bit” or “a pinch” but usually it’s about 1 TSP for most of the spices if you want to get real mathematical!
