Recipes!

Ok guys so the past couple days I’ve been really enjoying to cook again! Yay! I’ve made a couple super yummy recipes that aren’t really fattening that hopefully some of you can enjoy!

  1. Pumpkin Enchiladas

If you like the texture of refried beans, you will love this and I promise you can’t taste the pumpkin! It’s a great different vegetarian alternative for enchiladas!

Ingredients

  • Can of organic pumpkin
  • Garlic
  • Onion
  • Whole wheat tortilla wraps
  • Black or kidney beans (I used kidney)
  • Cumin
  • Chili seasoning
  • Cilantro
  • Shredded cheddar
  • Can of enchilada sauce
  • Sour cream!

PreHeat oven to 350

First I sauté my onion and garlic in a nonstick pan with a drop of olive oil for about 2 minutes or so. Next add in some of the enchilada sauce stir. Add in pumpkin and spices (about 1 tsp chili powder, 1 1/2 tbsp cumin, and a large handful of chopped cilantro). Let that cook for about 2/3 min or so on med low. Add beans and let that cook for 2 more minutes as you use more of the enchilada sauce to line the baking pan. Fill tortilla with pumpkin mixture, roll up flap facing down, add remaining enchilada sauce and cheese on top. Pop it in the oven for 10 min or until cheese is melty!

2. Chicken, Bacon, Avocado, Ranch Wraps

This is a nice quick and fresh meal that tastes like Heaven!

Ingredients

  • Chicken breast
  • Avocado
  • Lettuce
  • Tomato
  • Bacon
  • Ranch
  • Salt
  • Pepper
  • Shredded cheese
  • While wheat wraps

First you start by frying up some bacon. When that is done, set aside. Flavor your chicken with salt and pepper and throw it on the George Forman Grill! When fully cooked cut it up! Cut up some tomatoes, lettuce, and avocado! Put it all on the wrap and drizzle some ranch on everything, top with some cheese, wrap it up & enjoy!!

3. 2 Ingredient Pineapple Angel Food Cake

This literally is a guilt free, delicious, and weight watcher approved (for all my friends on their fitness journey!)

Ingredients

  • 20oz can of Crushed Pineapple IN JUICE not syrup
  • Box of Angel Food cake

PreHeat oven to 350

Mix 2 ingredients together with a spoon no mixer needed! It creates a frothy delicious concoction! Pour into 9X13 pan. Cook for 30 min and enjoy!! I added a cool whip topping and it was so delicious!!
